Challenge: Balancing Macros with Margins

    • Nutritional Constraints: The client needed to optimise their menu while adhering to strict bodybuilding macros—maintaining exact quantities of calories, protein, carbohydrates, fats, and sodium across multiple meal sizes.

    • Operational Diversity: The menu had to offer variety to prevent customer fatigue while also accounting for specific dietary requirements, such as weekly omega-3 intake.

    • The Profit Leak: Internal menu iterations failed to account for the complex interplay between ingredient costs, cooking shrinkage (yield loss), and labour.

Solution: The Granular Nutrition & Cost Simulator

Analytical Models developed a bespoke Nutrition Optimiser to automate the menu-selection process:

    • Yield-Loss Analytics: The model incorporated precise “Actual Cost per kg” vs. “Cooked Price per kg” logic, accounting for yield loss during production to ensure true cost-per-meal accuracy.

    • Algorithmic Ranking: We built a model that identified all possible menu combinations and ranked them based on a multi-factor scoring system including ingredient type, cost, labour, and nutritional profile.

    • P&L Menu Integration: A specialised “P&L – Menu” layer was created to translate nutritional decisions directly into financial outcomes, allowing for real-time “What-If” analysis of different meal sizes (Lite, Std., Cust.).

Outcome: Revamped Offerings & Improved Retention

    • Optimised Margins: The revamped menu resulted in reduced per-meal costs, which directly increased profit margins without compromising nutritional quality.
